2020 - our olives are grown atSierra Mágina, located in the central-southern part of the Jaen province, in the surroundings of Mágina mountainous chain. Sierra Mágina Natural Park is also located in this area. The figure of the Natural Park recognition is a proof of the values of respect to nature, diversity and sustainability of this territory. In the production of the oils protected by the Denomination of Origin, the process begins with the harvest in the field, which is carried out using only olives from the tree, collected with care and cleaning to avoid oxidation, and delivered to the oil mill just after its harvest. The fruit must be ground in less than 48 hours after receipt.
