We exclusively select olives from the Picual and Hojiblanca varieties, hand-harvested early to ensure maximum freshness and high polyphenol concentration.
Cold extraction takes place within less than 4 hours after harvest, preventing oxidation and resulting in an oil of extraordinary quality, with a unique organoleptic profile and exceptional stability.
